Ingredients

For the burger

  • 112g/4oz ground beef
  • 56 gram Shredded White Cheddar Cheese
  • Plancha Oil
  • 3 gram Atlantic Gray sea salt
  • 2 gram Freshly ground black pepper

For the pita

  • 15 gram Aioli (https://food52.com/recipes/93413-best-homemade-aioli-by-chef-eyal-shani)
  • 15 gram Sour Cream
  • 2 thin slices of tomato
  • 3 thin slices of pickles, cut vertically
  • 1 pita

Directions

For the burger

  • Step 1

    Take 115g or 4 oz of ground beef and mold the burger into a ball about the size of your hand. Shaping the burger with your hands will open the protein and help create a nice patty.

  • Step 2

    Place the ball on a piece of 30 X 40 cm parchment paper, folded so that both sides of the ball are fully covered with parchment paper.

  • Step 3

    Place the beef in the parchment paper in the middle of the tortilla press. Use the machine to flatten the ball into a nice round beef patty. It should be a thin circle, enclosed in parchment paper. Keep the burger wrapped in parchment paper so it doesn’t get dry and oxidized.

  • Step 4

    When you’re ready to cook your burger, peel off one side of the parchment paper so you can season your burger.

  • Step 5

    Season the burger with plancha oil, salt and pepper.

  • Step 6

    Cook until the burger starts shrinking and firming up on the edges.

  • Step 7

    The burger is ready for the cheese when it shrinks 1 size down from its starting size. Cover one side of the burger with cheese.

  • Step 8

    Let it cook for a bit - you want the cheese on top of the burger to start melting and the cheese on the plancha to start to crisp up.

  • Step 9

    Fold the side of the burger without the cheese onto the other side. Fold it in half on top of the new circle you've created with the cheese (i.e. not just onto itself, fold it onto the far edge of the cheese).

  • Step 10

    Once you can see a golden color on the outer edge of the cheese. Gently flip it over and cook on the other side (approx. 2 minutes) until the cheese is melted inside and crusty on the edges.

  • Step 11

    Cut off the top of the pita, cutting the long way so you have a wider opening than normal.

  • Step 12

    Spread aioli and sour cream inside the pita on both sides.

  • Step 13

    Place the 3 slices of pickles and 2 slices of tomato flat on one side of the pita, making sure they’re peeking out of the top.

  • Step 14

    Using tongs, gently place the Folded Cheeseburger inside the pita. A large portion of the burger should be sticking out of the top of the pita.

For the pita

  • Step 1

    Cut off the top of the pita, cutting the long way so you have a wider opening than normal.

  • Step 2

    Spread aioli and sour cream inside the pita on both sides.

  • Step 3

    Place the 3 slices of pickles and 2 slices of tomato flat on one side of the pita, making sure they’re peeking out of the top.

  • Step 4

    Using tongs, gently place the Folded Cheeseburger inside the pita. A large portion of the burger should be sticking out of the top of the pita.
