Ingredients

  • 10 cloves Garlic
  • 12 ounce Tomatoes (cherry tomatoes are great for this)
  • 7 Thai Chili Peppers (adjust to your spice tolerance)
  • 2 Shallots
  • 1 tablespoon Fish Sauce
  • Chopped cilantro (optional)

Directions

  • Step 1

    Preheat oven to 425 degrees.

  • Step 2

    Add garlic, shallots, tomatoes, and chili peppers on a sheet pan. Bake in the preheated oven for around 20 minutes until everything is nicely roasted.

  • Step 3

    Throw the garlic and chilis into a mortar and pestle and mash into a paste. Add shallots and continue to mash. Add tomatoes and pound everything down.

  • Step 4

    Once you reach your desired consistency, stir in the fish sauce and add chopped cilantro.

  • Step 5

    Transfer to container, store in fridge, and enjoy with everything.
