Greek Pasta Salad

I'm a huge fan of Greek food. Since my trip to Greece about four years ago, I've been hooked on Greek salads. Fortunately, it's easy to recreate at home, and it's a summer staple. This recipe is Italian-inspired with rotini pasta.



Ingredients

Pasta Salad

  • 12 oz rotini pasta (about 3/4 of a standard 1-lb box)
  • 1 English cucumber, halved lengthwise and sliced into half-moons
  • 1/2 small red onion, thinly sliced (or about 1/3 cup sliced)
  • 1 cup grape tomatoes, halved
  • 3/4 cup crumbled feta cheese
  • 1/2 cup pitted Kalamata olives, halved

Dressing

  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 tsp dried oregano
  • Juice of 1 lemon
  • Salt and freshly ground black pepper, to taste

Directions

  • Step 1

    Cook the pasta according to directions. Drain pasta and rinse with cold water.

  • Step 2

    In a salad bowl, combine pasta, cucumber, red onion, tomatoes, feta cheese, and olives.

  • Step 3

    Combine the ingredients for the dressing in a medium glass jar, whisk oil, vinegar, a squeeze of the lemon, oregano, salt and pepper.
