Greek Pasta Salad

I'm a huge fan of Greek food. Since my trip to Greece about four years ago, I've been hooked on Greek salads. Fortunately, it's easy to recreate at home, and it's a summer staple. This recipe is Italian-inspired with rotini pasta.
Ingredients
Pasta Salad
- 12 oz rotini pasta (about 3/4 of a standard 1-lb box)
- 1 English cucumber, halved lengthwise and sliced into half-moons
- 1/2 small red onion, thinly sliced (or about 1/3 cup sliced)
- 1 cup grape tomatoes, halved
- 3/4 cup crumbled feta cheese
- 1/2 cup pitted Kalamata olives, halved
Dressing
- 1/2 cup olive oil
- 1/3 cup red wine vinegar
- 1 tsp dried oregano
- Juice of 1 lemon
- Salt and freshly ground black pepper, to taste
Directions
- Step 1
Cook the pasta according to directions. Drain pasta and rinse with cold water.
- Step 2
In a salad bowl, combine pasta, cucumber, red onion, tomatoes, feta cheese, and olives.
- Step 3
Combine the ingredients for the dressing in a medium glass jar, whisk oil, vinegar, a squeeze of the lemon, oregano, salt and pepper.
