Non-Alcoholic Espresso Martini

Ingredients
For the drink:
- 1 ½ ounce Seedlip Spice 94
- 1 ¼ ounce chilled espresso
- ¾ ounce light brown sugar rich syrup
- 3 coffee beans, for garnish
- Espresso powder, for garnish
For the light brown sugar rich syrup:
- 1 cup light brown sugar, packed
- ½ cup near-boiling hot water

An espresso martini is the best of both worlds: a lavish libation fit for a night on the town and a jolt of caffeine to fight the post-dinner lull. Born out of the 1980s London bar scene, it’s having a moment on cocktail menus once again thanks to a new nostalgia-obsessed generation of drinkers. This ‘tini can be made with just about any base spirit and mixed with some sort of coffee (traditionally coffee liqueur), which makes Seedlip’s Spice 94 non-alcoholic spirit paired with chilled espresso a perfect fit for this tried-and-true formula. Subtle molasses flavor from the light brown sugar rich syrup—made from two parts sugar and one part water—enhances the allspice, cardamom, and citrus top notes of the Spice 94, which makes for an ultra-sippable drink. Directions
For the drink:
- Step 1
Combine the ingredients (minus the garnish) in a cocktail shaker filled about one-third with ice; we'll shake with less ice to encourage aeration and avoid over-diluting the drink.
- Step 2
Fine-strain into a chilled coupe or martini glass. Top the drink with excess foam from your strainer.
- Step 3
Garnish with the coffee beans and dust with espresso powder over top. Serve right away.
For the light brown sugar rich syrup:
- Step 1
Combine the light brown sugar and hot water in a heat-safe container and stir to combine until the sugar is dissolved. Let cool completely and store in the refrigerator for up to 2 weeks.
