Hotter in the Hamptons Strawberry Spritz with Tinx

In celebration of Tinx's new book, Hotter in the Hamptons, we developed a refreshing strawberry and St. Germain spritz perfect for summer. It’s incredibly easy to make and if you want to plan ahead, you can prep the strawberries the night before and let them macerate in the fridge overnight.


Ingredients

Macerated Strawberries

  • 1 pound strawberries, rinsed and cut into ½-inch pieces (about 3 cups)
  • 1/4 cup plus 2 tablespoons granulated sugar
  • Zest of 2 medium limes
  • 1/4 cup freshly squeezed lime juice (2 medium limes)
  • 2 tablespoon chopped mint
  • 1 teaspoon freshly grated ginger
  • 1/4 teaspoon kosher salt

Strawberry St. Germain Spritz

  • ice
  • 3 tablespoon strawberry puree
  • 1/2 ounce St. Germain (elderberry liquor)
  • 3 ounce processo
  • 1 lime, sliced, for garnish
  • Fresh mint, for garnish

  • Step 1

    Macerate the strawberries: In a medium bowl, combine the strawberries, sugar, lime zest and juice, mint, ginger, and salt. Stir to combine, then cover and refrigerate until the strawberries have softened, soaked up the other flavors, and released their juices, 30 minutes to 1 hour (this can be done the day before too)

  • Step 2

    Transfer the mixture to a blender or food processor and blend until smooth. Strain through a fine mesh sieve, then discard solids and keep the purée chilled until ready to use.

  • Step 3

    Assemble the spritz: In a cocktail glass filled with ice, combine strawberry puree and St. Germain. Top it off with prosecco and any additional strawberry syrup. Add a sprig of mint and a lime slice for garnish, if desired.
