These waffles are for those who want a sweet start to the morning but also know how important it is to begin the day with a bit of protein.

A lot of protein waffle recipes require using things additives and things like protein powder. These are made using only natural, protein-rich ingredients like red lentils and cottage cheese.

They freeze incredibly well and can be heated up in the toaster oven post-workout. And! If you don't have a waffle maker, you can use the batter to make pancakes.


Ingredients

  • 2 cup red lentils
  • 2 cup old-fashioned rolled oats
  • 1 cup whole milk
  • 1 cup cottage cheese
  • 1/3 cup maple syrup, plus more for serving
  • 4 large eggs
  • 2 teaspoon cinnamon
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • Cooking spray, for cooking
  • Melted peanut butter, for serving (optional)

Directions

  • Step 1

    Add lentils to a large bowl and cover with cold water by 2 inches. Let soak at least 4 hours and up to overnight.

  • Step 2

    Preheat oven to 250 F. Strain lentils then add to a blender, along with the rest of the ingredients, and process until you have a thick batter.

  • Step 3

    Preheat your waffle maker. When ready, grease with cooking spray then pour in waffle batter. Cook until the waffle is fully set, golden brown and the edges are slightly crispy.

  • Step 4

    Transfer finished waffles to a sheet tray fit with a cooling rack and keep warm in the oven until ready to serve. Repeat with the remaining batter.

  • Step 5

    Serve with maple syrup and a drizzle of melted peanut butter.
