Ingredients
- 2 cup all-purpose flour
- 2 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1 tablespoon sugar
- 1 egg
- 1/2 stick (4 Tbls) butter, melted
- 1 tablespoon Dijon mustard
- 1 cup buttermilk
- 1 1/2 cup small diced Gruyere or firm cheddar Cheese
- 1 cup diced ham
- 1/4 cup chopped chives or scallions

Directions
- Step 1
Preheat oven to 375°F
- Step 2
Spray a muffin tin with cooking spray. You can use paper liners as well, but spray them after you put In the pan. Combine the flour, baking powder, baking soda, garlic powder, chives and salt into a bowl. Make a well in the centre of the flour.
- Step 3
In another bowl, whisk together sugar, egg, butter and mustard until well blended, then whisk in buttermilk.
- Step 4
Add the egg mixture to the well and stir until just blended. Do not over mix. Gently fold in the cheese and ham.
- Step 5
Spoon mixture evenly, into the prepared muffin pan. Bake 25 minutes or until golden and a toothpick inserted in the centre comes out clean. **You can split these in half and serve with an egg or as l like to serve with a little bowl of Dijon
