Peach Crumble Snacking Cake

As I’ve said before, snacking cakes are just cakes that you can enjoy throughout the week no matter the time of day. You should be able to incorporate seasonal items into it to help make the process both easy and enjoyable. I love stone fruit season because my farmers market always has a ton of peaches varying in sizes. I had some leftover peaches and wanted to make a cake that had a crunchy topping, but contrasted with the jammy peaches that are added to the cake batter. I do recommend searching for the freeze dried peaches because it gives it a nice visual once the cake is ready to be enjoyed, but don’t let that specialty item stop you from making this!



Ingredients

Cake

  • 1 1/3 cups (166g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (113g) butter, room temperature
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1/2 cup (120g) sour cream, room temperature
  • 2 cups peaches (about 300g), sliced

Crumble topping

  • 1 1/2 cups (320g) brown sugar
  • 1 1/2 cups (180g) flour
  • 3 teaspoons cinnamon
  • 9 tablespoons (128g) butter, cold and cubed
  • 2 tablespoons freeze dried peaches or powdered sugar

Directions

Make the cake

  • Step 1

    Preheat oven to 350 F and prepare an 8-inch cake pan with parchment paper.

  • Step 2

    In a medium bowl, add the flour, baking powder, baking soda, and salt. Whisk together and set aside.

  • Step 3

    In a large bowl, combine your butter and granulated sugar using an electric mixer. Cream the mixture together until it has lightened in color and is fluffy. About 5 minutes. Use a rubber spatula to ensure ingredients are incorporated.

  • Step 4

    Add in the eggs and continue beating.

  • Step 5

    Next, add in your vanilla extract and sour cream. Continue mixing until combined.

  • Step 6

    Slowly pour in the dry ingredients, and using a rubber spatula, fold the ingredients until the flour has almost disappeared.

  • Step 7

    Add in the sliced peaches and combine.

  • Step 8

    Pour your batter into the prepared cake pan and prepare your crumble topping.

Make the crumble topping

  • Step 1

    Combine the brown sugar, flour, and cinnamon in a medium bowl. Whisk together.

  • Step 2

    Add in the cubed butter and using your fingertips, mash the butter into the mixture. You’ll want varying sized pieces. The crumble will be ready once you’re able to grab a portion and it holds together.

  • Step 3

    Sprinkle the crumble topping onto the cake.

Bake and assemble

  • Step 1

    Bake the cake for about 35 - 40 minutes, but use a cake tester to confirm the cake is fully done.

  • Step 2

    Let the cake cool fully and once cooled, remove from the pan.

  • Step 3

    Sprinkle on top the crushed freeze dried peaches or powdered sugar.
