Peaches and Cream Snacking Cake

I was inspired to make this Peaches and Cream cake because my farmer's market was on its last weekend of having peaches sold. The base layer is a simple vanilla cake with lemon zest and then it's topped with a vanilla whipped cream and peaches that are soaked in brown sugar and lemon juice.


Ingredients

For the cake

  • 1 1/2 cups (188g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 tablespoons (56g) salted butter, room temperature
  • 2/3 cup (134g) granulated sugar
  • 3 tablespoons (45mL) vegetable oil
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 3/4 cup (90mL) buttermilk, room temperature
  • 1 tablespoon lemon zest

For the whipped cream

  • 1 1/2 cups (360g) heavy whipping cream, cold
  • 1 tablespoon vanilla extract

For the peach topping

  • 3 medium peaches, sliced
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

Directions

To make the cake

  • Step 1

    Preheat your oven to 350 F and prepare an 8-inch cake pan with parchment paper.

  • Step 2

    In a medium bowl, combine the flour, baking powder, baking soda, and salt.

  • Step 3

    In a large bowl using an electric mixer or whisk, combine the sugar, vegetable oil, lemon zest and butter until pale, about 5 minutes.

  • Step 4

    Add in the eggs, vanilla extract, and buttermilk. Continue whisking.

  • Step 5

    Pour the dry ingredients into the wet and using a spatula, carefully fold the ingredients in until the flour has fully disappeared.

  • Step 6

    Bake in the oven until the cake is golden brown and a cake tester comes out clean, about 30 minutes. Let cool and set aside.

To make the peaches

  • Step 1

    In a medium bowl, add all the ingredients for the peach topping. Stir to combine and set aside for 10 minutes until juices release.

To make the whipped cream

  • Step 1

    In a large bowl, pour in the cold heavy whipping cream and using an electric mixer, beat on high until medium peaks have formed, about 3 minutes.

To assemble the cake

  • Step 1

    Remove the cake from the prepared cake pan

  • Step 2

    Carefully add the whipped cream on to the cake.

  • Step 3

    Using a spoon, add the sliced, prepared peaches on top. Pour on additional juices.
