Terrence’s Mom’s Jambalaya

Ingredients
- 1 Onion
- 2 Celery Stalks
- 1 Green Bell Pepper
- 2-3 Cloves Garlic
- 1 14oz Can Diced Tomatoes
- 2 Bay Leaves
- 2 Sprigs of Thyme
- 1lb Shrimp, Peeled and Deveined Tail-Off
- 1lb Sausage
- 1 Cup Rice
- 2 Cups Chicken or Shrimp Stock
- Kosher Salt
- Black Pepper
- Cayenne
- Red Pepper Flakes
- Olive Oil
Directions
- Step 1
Dice onion, celery, and bell pepper.
- Step 2
Cut sausage into half moons.
- Step 3
In a large pot over medium heat, brown sausage in a little olive oil.
- Step 4
Add onion, celery, and bell pepper. Season with salt and pepper. Cook for 5 minutes.
- Step 5
Mince garlic and add to pot. Cook until fragrant.
- Step 6
Add tomatoes, bay leaves, and thyme. Cook for 5 minutes.
- Step 7
Stir in rice and stock. Bring to a boil, then reduce heat to a simmer. Cover and cook for 25 minutes.
- Step 8
Add shrimp and cook for an additional 5 minutes.
- Step 9
Let sit for 5 minutes before serving.
