5 Minute Sopa de Frijoles (Bean Soup)

Sopa de frijoles is a Honduran staple and one that I eat at home with my family a lot. It's one of my favorite dishes because it takes minimal work. You simply chop up the ingredients and then add them to a pot of beans and let the heat do the work. You can eat the soup with cilantro, avocado, and even a hard boiled egg! This soup is also known as Blue Monday soup in New Orleans because as the soup is cooking on the stove, people would do their chores around the house.
It takes 5 minutes to prepare and then you can focus on other things in the kitchen or at home while it cooks.
Ingredients
- 1 LB red kidney beans, dried
- 1 medium onion, diced
- 3 garlic cloves, chopped
- 6 pork ribs, cut into single pieces
- 2 teaspoons cumin
- 3 teaspoons black pepper
- 3 teaspoons kosher salt
- Fresh cilantro (for garnish)
- 1 avocado, cut into pieces (for garnish)
- 1 cup rice (for serving)
Directions
To make the soup
- Step 1
Fill your dutch oven or a large pot with water, filling to about 3/4 of the way.
- Step 2
Add in all your ingredients, starting with the dried beans.
- Step 3
Turn your heat to medium and add bring the pot to a boil and then cover with a lid.
- Step 4
Allow the soup to cook until the beans are soft and the meat is tender, about 2 hours.
To serve
- Step 1
Add rice to your bowl.
- Step 2
Using a ladle, pour in soup on top of rice. Garnish with cilantro and avocado.
