Yes, you do have to make the pasta separately, but the sauce is so hands-off that it practically cooks itself, so you will have bought yourself some extra time! Ingredients
- Vegetable oil spray
- 4 cup sliced mushrooms
- 1 medium yellow onion, chopped
- 2 garlic cloves, minced
- 1/4 cup heavy whipping cream or half-and-half
- 8 ounce mascarpone cheese
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 4 cup cooked konjac noodles, cauliflower rice, linguine, or spaghetti, for serving
- 1/2 cup grated Parmesan cheese

Directions
- Step 1
Spray a 7×3-inch round heatproof pan with vegetable oil spray.
- Step 2
In a medium bowl, combine the mushrooms, onion, garlic, cream, mascarpone, thyme, salt, black pepper, and red pepper flakes. Stir to combine. Transfer the mixture to the prepared pan.
- Step 3
Place the pan in the air fryer basket. Set the air fryer to 350°F for 15 minutes, stirring halfway through the cooking time.
- Step 4
Divide the pasta among four shallow bowls. Spoon the mushroom mixture evenly over the pasta. Sprinkle with Parmesan cheese and serve.
