Savory Plum Glaze

This sweet, sour, and salty glaze is perfect on a thick grilled pork chop, but would be just as delicious lacquered onto roast chicken or duck.


Ingredients

  • 3-4 cups red or black plums, pitted and roughly chopped
  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1/4 teaspoon red chili flakes
  • additional salt to taste

Directions

  • Step 1

    Add the plums, honey, soy sauce, rice vinegar, and chili flakes to a medium saucepan. Place over medium heat and bring to a simmer. Lower the heat to medium low and allow to stew down for 5-8 minutes, stirring often and breaking up the plums with a wooden spoon as they cook. Once the plums have broken down and released their juices, transfer to a blender and blend until smooth. Season to taste with salt and allow to cool before using to glaze pork or chicken on the grill or in the oven.
