Pupusas Stuffed with Chicken and Cheese

Pupusas are stuffed griddle cakes with origins from El Salvador and Honduras. There's a restaurant in Atlanta called La Bodega that's a market and pupuseria. They recently inspired me to make my own pupusas at home! The dough comes together in a bowl and with just 3 ingredients you'll have it ready to go in a few minutes.
You can easily stuff these with whatever filling you'd like, but I opted for chicken and a queso fresco. I do recommend trying other fillings out too once you get a hang of creating the pupusa dough; so beans, vegetables, and other types of cheese!
These are generally served with a curtido, which is a type of slaw, but you can also pair them with your favorite salsa and guacamole too.
Ingredients
For the pupusa dough
- 2 1/2 cups masa harina (white cornmeal)
- 1 teaspoon salt
- 2 cups water
For the filling
- 3 cups shredded, prepared rotisserie chicken
- 1 cup queso fresco
For frying
- 1/4 cup vegetable oil
Directions
To make the pupusa dough
- Step 1
In a large bowl, combine the masa harina (white cornmeal), salt, and water.
- Step 2
Using a spatula (or a clean hand), combine the ingredients together until a smooth ball has formed. If it's still crumbly, add a few teaspoons of water.
- Step 3
Let rest for 10 minutes.
To prepare the filling
- Step 1
In a medium bowl, combine the shredded chicken and cheese in a bowl.
To prepare shape and fill the pupusas
- Step 1
Divide the dough into 10 equal portions and form small balls for each.
- Step 2
With wet hands and going one-by-one, flatten out each ball into a thin disc by slapping it in your palms back and forth. Add 2 tablespoons of filling to each disc and wrap it in itself.
- Step 3
Still using wet hands, ensure that the filling is fully covered and carefully flatten out the disc ensuring the filling stays inside. Continue until all your pupusa dough is used.
To fry your pupusas
- Step 1
In a skillet, add your vegetable oil and keep the temperature on medium.
- Step 2
Once heated, add 2 or 3 pupusas to the skillet ensuring you're not overcrowding. Cook on both sides for about 5 minutes until they are golden brown.

Serve with guacamole, salsa, or curtido and enjoy!
