Roasted Cauliflower White Cheddar Soup

I'm not the biggest fan of cooking lunch or dinner, especially if I'm busy baking all day. But with making soup, it's rewarding because I like finding quick recipes that are just a few ingredients and the heat does all the work.
If I have to choose, I'll always pick cauliflower over broccoli and with your cheese of choice, you can have this soup ready in under an hour!
Ingredients
- 32 ounce box of vegetable stock (or chicken stock)
- 1 medium head of cauliflower, chopped into florets
- 1 medium onion, chopped
- 3 cloves of garlic, chopped
- 3 teaspoons kosher salt
- 2 teaspoons black pepper
- 1 teaspoon red chili flakes
- 2 tablespoons salted butter
- 1 8-ounce sharp white cheddar cheese
Directions
To prepare the cauliflower
- Step 1
On a parchment lined baking sheet, add the chopped florets. Add a generous pour of olive oil and season with salt and pepper.
- Step 2
With the oven set to 425 F, bake for 30 minutes, stirring halfway through. Remove from oven after the cauliflower florets are browned and let cool slightly.
To make the soup
- Step 1
In a large pot, drizzle in a couple tablespoons of olive oil and let heat on medium heat. Add in your chopped onions and cook for 5 minutes.

Add in your chopped garlic and continue cooking, for another 30 seconds.
- Step 3
Pour in your stock and the cauliflower pieces, keeping a few of the florets to the side for garnishing. Cook on medium low heat for 15 - 20 minutes until the mixture reduces and the cauliflower begins breaking down.
- Step 4
Remove from the heat and let the mixture cool slightly for about 5 minutes.Using an immersion blender, blend the soup until the florets are smoothed with some thick pieces remaining. If you want the soup to be more smooth and less chunky, you can use a full blender or add additional stock and continue blending.
- Step 5
Continuing off the heat, add in the butter and red chili flakes. Stir to combine.

With the grated cheese, add to the soup and using a spoon, mix until the cheese has fully melted.
- Step 7
Using a ladle, pour soup into the bowl. Add additional florets for garnishing, extra cheese, and herbs of choice.
